Fonio Appetizer Recipe By Chef John Bentley

• 1 c Fonio
• 4 c Water, stock or cream, simmering, slowly whisking in Fonio, 8 mins, add
• ¼ c Asiago or Parmesan
• ¼ c Pecorino or Favorite Dry Cheese
• Salt and Pepper to taste
• 1 tsp Fine Herbs (parsley, thyme, chives
• Pour into mold, let chill, cut into squares
• Bread with egg wash and Bread crumbs or raw Fonio
• Pan Fry
